Scrumptious Triple Chocolate Cookie

Today is National Cookie day and who doesn’t love a good cookie recipe ?! Here is our family favourite Triple Chocolate Cookie.

The English word “cookie” is derived from the Dutch word “koekie” meaning little cake.

The origin of the cookie appears to begin in Persia in the 7th century, soon after the use of sugar became common in the region. They were then spread to Europe through the Muslim conquest of Spain. Cookies were common in all levels of society throughout Europe by the 14th century, from the royal cuisine to the street vendors.

My girls are huge fans of chocolate so triple chocolate is the only way to go ! After all which kids or adult can resist cookies and milk ?

Scrumptious Triple Chocolate Cookies

Ingredients

200g/7oz plain flour

1/2 tsp baking powder

125g /4oz butter

90g/3oz light brown sugar

90g/3oz caster sugar

1 egg

125g/4oz Milk Chocolate Spread

30g/1oz Cocoa Powder

150g White Chocolate Chips

2-3 drops of vanilla essence

The How to Bit

1. Preheat the oven to 180 degrees/350 degrees F /Gas mark 4

2. Cream the butter and both of the sugars together until creamy and light.

3. Beat in the egg and the chocolate spread and vanilla until fully mixed.

4. Sieve in the flour, baking powder and Cocoa powder and mix in.

5. Stir in White Chocolate chips

6. Place 6 heaped dessert spoons of mix onto a cookie tray at a time – leave space so they can spread and they will. Will make approx 20

7. Bake for 14 minutes and when the cookies are baked take the cookies out and allow to set for 2-3 minutes then transfer to a cooling rack.

If you want plain Smartie/M&M cookies leave out the Chocolate spread and the cocoa , double the butter and add Smarties when you would add the Chocolate chips. Enjoy with some cold milk or tea or coffee if you need a boost.
