Salted Caramel Mince and Custard pies
These little bits of Mince pie heaven have a melt in the mouth Caramel Pastry crust
For the Pastry
or 5 oz
cubed and a little for greasing the tin
salted caramel flavouring
For the Filling
Specially Selected Brandy infused Mince Meat
To Decorate – optional
White rolling icing
1. In a bowl add the flour and the icing sugar and rub in the cubes of butter
2 Mix in the egg and the flavouring and bind together to make a dough.
3. roll out the dough on an icing sugar-dusted board to about a 1/2 thin and cut out 2-inch circles .
4, Place circles in greased mini muffin tin
Pre-heat the oven to 180°C or Gas Mark 4
5. to each pie case add a spoon of custard and one spoon of mince pie mix
With the left over pastry cut small pasty tops for the lid and pad to the pies.
Place in the oven and cook for 15 minutes
While cooking roll out your white fondant icing to 1/2 cm thick and cut out small stars to decorate
Remove pies from the oven when golden brown and decorate with the stars
