I used to love Rhubarb & Custard as a child, admittedly it was the TV show Roobarb and Custard but I grew to love the dish too.
Another dish I love we all love is crumble, so when my daughter was diagnosed as Coeliac last year I knew I had to come up with a new way of making it. So tried a few ways and was delighted when I found out I could use oats.
So is Rhubarb & Custard Oat Crumble Gluten Free?
Oats grown away from and processed away from wheat and grains are Gluten Free. The main problem with oats in gluten-free eating is contamination. Most commercial oats are processed in facilities that also process wheat, barley, and rye. The gluten in these ingredients can contaminate oats, and the nature of most gluten intolerances is that even a trace amount of gluten can cause severe discomfort. So that box of Cheap Oats? Probably not gluten-free.
What about the Custard Part?
Packet custard can be gluten-free. Both Ambrosia and Bird’s pre-made custard are gluten free but check the packaging of anything before you buy it.
On to the recipe part. I was delighted when the crumble worked on an apple crumble. Rhubarb is in season and I decided to merge them with custard !! YUMMY !
