Getting kids to eat fish can be hard. I know I was blessed with my eldest, that kid ate everything once including octopus. But I learnt with my youngest not all kids are as easy and tasty Mackerel fish cakes was born. In fact, my first fish cakes were cod and salmon, both good and very tasty. But Mackerel is a fish I love and is full of omega oil which is great for developing brains.
I personally would eat Mackeral straight off the pan and so does my eldest. But tasty mackerel fish cakes can be made up and freeze well.So they can be cooked any time you like in a pan with a bit of oil. To satisfy the fussiest of fish eaters.

Here is your Tasty Mackerel Fish Cakes Recipe
TARRAGON SAUCE ( VEGAN)
- 2 Tbsp chopped fresh Tarragon
- 1/2 tin of Coconut milk
- 1 Tbsp lemon juice (or lime juice)
- Pinch turmeric
- Salt & pepper to taste
The How to Bit
- In a mixing bowl, stir together all the ingredients.
- Alternately, combine all ingredients in blender or food processor, and whiz briefly to combine
- Cover and refrigerate for at least 1 hour
