Tasty Vegan Chocolate Christmas Cookies
I love the Blogging community you get to meet such lovely people. One of those lovely people that I have had the joy of meeting via blooging is Randi from Beautifully Bohemian. I adore her writing and love her recipes. So when she challenged me to come up with a Vegan Christmas treat recipe I knew I had to try.
I know people can think of vegan food as bland or tasteless but it is not the case. Seriously check out Randi’s Classic Dairy free fudge it is amazing !!
It was fun to find out more about vegan foods and I was shocked to find out that even certain sugars are refined with animal bones. This was news to me but I found out on the Peta website that Supervalu’s and Aldi’s Sugars are Vegan-friendly. Great news for anyone thinking being Vegan is more expensive and you need special foods!
I wanted to make a decent Vegan Christmas cookie recipe – I really wanted to do my Vegan friend proud. So I went on the hunt for ingredients and it was so easy to find them. I Aldi I got my Vegan Chocolate and I found this pack of dried cranberries, blueberries, and inca berries in the gluten-free aisle.
In Supervalu I got my sugar and Pure free-from Sunflower spread for the cookie recipe. I set about baking and taste testing and these cookies won the day. By the Way Vegan chocolate rocks so much that I make Berry Chocolate Bark !!
I left the plate of Berry Chocolate Bark on the table after I took pictures, went out to get milk and came back to an empty plate. The teenagers demolished the lot ! You can’t get a better endorsement than that !!
So onto my recipe Below
- 200 gms plain flour
- 2 tbsp Pure Sunflower Spread Any Non Dairy spread will do
- 100 gms caster sugar
- 1 tsp Madagascan Vanilla Essense
- 2 tbsp Berries Mix
- 1 block Vegan chocolate
- Cream the butter, vanilla and sugar together. Stir the berries into the flour and mix into the butter and sugar and form a dough.
- Wrap in cling film and chill in the fridge for at least 30 minutes to firm up.
- Meanwhile, preheat the oven to 160°C /320°F and line a baking tray with greaseproof paper.
- Once the dough is chilled, roll out to approximately ½ cm thickness and cut into shapes.
- Place on the baking sheet, sprinkle with a little extra sugar and bake for 12-15 minutes until golden brown at the edges, turning half way through to ensure even baking.
- Leave to cool for at least 10 minutes - while you melt the chocolate for dipping
- When the chocolate is ready dip each cookie in halfway and leave to set on a wire tray
The cookies will last for a week if stored properly and the Christmas colours of the berries make them so festive you could wrap them as a gift.
Berry Vegan Chocolate Bark
I had leftover Chocolate in the bowl so I added more and melted it all. Pour it out onto a cool baking tray and spread it with a spatula. And sprinkle it with the rest of the berry mix and some crushed hazelnuts and placed it in the fridge to cool. Once cool break up and serve for a tasty treat.

Yum! These cookies look incredibly delicious. When having people over, I always like to include some vegan options, so I will definitely be making a batch (or two!) of these cookies to my holiday dessert table.
