How did you end up cooking Irish Whisky Glazed pork chops and Colcannon?
Being Irish in Blogland come with a few expectations. One of them is that you will rock the St Patrick’s day recipes. Truth is, I usually cook something simple on Paddy’s day. I am most probably doing something else more St Patrick like. So something like one of these tasty Quick and Easy Meals ends up as St Patrick’s day Dinner. But I had pork chops in the freezer and Kale was on Special offer in the supermarket this week. I was going to share my Granny’s Colcannon recipe with you, my dear readers, so why not add some Irish Whiskey and Pork to the mix !!

These Irish Whiskey glazed pork chops are just so good and great for St Patrick's day Dinner serve them with my Granny's Colcannon below and you have a truly delicious Irish Meal

- 4 thick cut pork chops bone-in or boneless
- 50 g brown sugar/honey
- 2 big glugs of Irish Whiskey
- Chopped fresh Thyme
- tsp ½salt
- tsp ½black pepper
- Pre-heat your oven to 180 C /350 F . In a bowl combine the brown sugar or Honey and Irish Whiskey and some chopped thyme
- Remove the pork chops from their package and rub the brown sugar/spice mix all over both sides.
- Heat 2 Tbsp of olive oil in a skillet over medium/high heat. When the oil is nice and hot (it will look wavy in the pan), add the pork chops. Cook the chops for about 5 minutes on each side or until they are nicely browned.
- If you are using an oven-safe skillet, place the skillet in the oven for an additional 5 minutes to make sure they are cooked through. If your skillet is not oven safe (most plastic handled skillets and teflon are not safe in the oven), transfer the chops to a baking sheet lined with foil then place in the oven.
- Remove the chops from the oven and drag each side around in the thick glaze that has formed around the chops in the pan prior to serving.
And finally here is Granny’s Colcannon Recipe. Well, I say Granny’s but I first had it at my Auntie Jennie’s at Halloween and I heard it was passed down. Either way, it is good Colcannon.
