Almond Strawberry Rhubarb Pie
This tasty Rhubarb pie is perfect for after Sunday dinner, the fruits combine with the Almond pastry so well.

Filling:
Instructions
First, make the pastry
  1. Sift the flour into a mixing bowl or food processor,
  2. Cut in the butter and rub in or process to make a mixture like fine breadcrumbs.
  3. Blend in the ground almonds and sugar, then add the egg and mix to make a firm dough.
  4. Using 1/2 the dough roll out and use to line a 9″/23 cm flan ring. Trim the edges and chill for half an hour.
To make the Filling
  1. Wash and chop the rhubarb and strawberries then preheat a fairly hot oven, 375’F/190’C/Gas mark 5.
  2. Combine the sugar, flour, cinnamon, orange zest.
  3. Pour over the fruits and mix in
  4. Make a top for your pie from remaining dough.
  5. Wash pastry with an Egg wash
  6. Place in the oven for 45 minutes or until Golden Brown.
  7. Sprinkle with Sugar and serve with Whipped cream or Ice Cream
