Hearty Italian Fish Stew

I love Fish as a low-calorie protein option and this Hearty Italian Fish Stew is filling and healthy. I found the original recipe in a magazine and altered it to make it fit my 5:2 lifestyle.

If dietary changes are part of your overall plan to lower your cholesterol levels, fish is a good option. While all fish contain some cholesterol, many are high in omega-3 fatty acids. … Your body can’t make essential omega-3 fatty acids, so you have to get them from the food you eat.

This tasty stew is full of prawns and fish and tasty herbs and is cooked in one pot – saving on the washing up. It is also the perfect 5:2 Recipe as it is comes in at 162 per serving has 17g of protein and 16g of carbs.

The original recipe had potatoes in it which I am currently avoiding. This was swapped for Butternut Squash. Also, I added spinach as I have a tendency to add this fabulous source of nutrients and iron to everything savoury I cook. We eat a lot of spinach here which is why I grow my own spinach which you can read about here.

Ingredients
  • 150 g Prawns
  • 200 g Fish Mix Lidl - has mix of smoked and white fish
  • 1 White Onion chopped and diced
  • 1 butternut squash Pealed and diced ( or buy pre-chopped to save time)
  • 2 medium Celery chopped
  • 1 tin chopped tomatoes
  • 2 handfuls baby leaf spinach
  • 2 tsps smoked paprika
  • 2 cloves garlic crushed
  • 1 cup chestnut mushrooms sliced
  • 1 tsp italian herb mix
  • 3 sprays fry lite olive oil
  • 1 pint litre/1¾vegetable stock
Servings: people
Instructions
  1. In a big saucepan fry the onion and garlic in fry-lite until translucent
  2. Add in the musrooms, celery and the butternut squash cook with the onion and garlic
  3. Add in the fish and prawns and cook for five minutes to seal
  4. Pour in the chopped tomatoes, add the herbs and the vegetable stock
  5. Let it all simmer on a medium heat for 25 minutes then add the spinach for the last five minutes.

I love these handy low- calorie but nutritious meals which leave you feeling satisfied and are good enough to eat even if you are not trying to lose weight. Serve it with Cauli rice or steamed broccoli as low cal options or crusty artisan bread if you are feeling the need for more.
