The original recipe had potatoes in it which I am currently avoiding. This was swapped for Butternut Squash. Also, I added spinach as I have a tendency to add this fabulous source of nutrients and iron to everything savoury I cook. We eat a lot of spinach here which is why I grow my own spinach which you can read about here.
I love these handy low- calorie but nutritious meals which leave you feeling satisfied and are good enough to eat even if you are not trying to lose weight. Serve it with Cauli rice or steamed broccoli as low cal options or crusty artisan bread if you are feeling the need for more.
