It is Monday again, does anyone else think that this year is flying ? Here is our menu for this week –
We are having Chicken Fajitas and Homemade Spicy wedges – Monday is a busy day so I have lots to do and I want a quick and easy meal that I can throw together – if you want the Spicy Wedges recipe is HERE
Chorizo and Garden Vegetable Pasta is another easy to throw together meal – I work Tuesdays and need something not to complicated or time-consuming that I know the girls will eat and this fits the bill. Also if you wanted a vegetarian version leave out the chorizo and throw in some smoked paprika to give it flavour.
Wednesday is shopping day for us as Wednesday is pizza night usually served with wedges or a Caeser Salad – I have a great recipe for making your own stuff crust pizza HERE
Thursday I am relying on my trusty Slowcooker . If you haven’t invested in a Slowcooker yet I highly recommend them.
They are great for just dumping in a recipe and leaving it to cook while you work

I am a HUGE fan of Ikea and I love their Swedish meatballs. But it is a long trip to Ikea for me and it is usually a once a year thing. So when I found this recipe for Swedish Meatballs from Art and the Kitchen on Pinterest I was thrilled. You can pin her recipe HERE
Something simple – like great steak burgers from our local butcher , homemade chips and some of my Tomato and Chilli Relish which I have a recipe for HERE
Supervalu my local Supermarket has some special offers on minced beef and whole chickens this week for €3 each. This means I am picking both up for my freezer to save Money. The minced beef is for the Swedish meatballs and the Chicken will be for Sunday Roast. I like to bake while the oven is on for so long so I am going to make these tasty Apple and Hazelnut muffins.
Menu Planning might seem like a lot of work, but the truth is it takes about 15 minutes on a Sunday.
So settle down with a cup of your favourite beverage and your Free Menu Planner . This will save you a whole lot of time for the rest of the week.
