Well if last week taught us anything in Ireland we are not great at dealing with Snowy weather and that people here seem to be mad about Bread!! Meal Planning in Cold weather is actually really sensible – because of meal planning I had lots of food to feed my family and we didn’t have to run out to empty the shops of bread. In fact, the only thing we ran low on was toilet roll because I forgot to pick it up last week. Luckily I managed to get out today and get some, while my Roast chicken is cooking away in the oven.
Meal Planning means that even in odd weather you will always have something in for your family to eat and it will save you money too.
The great thing about meal planning is that if you take 10 -15 minutes to plan for the week ahead you will ultimately save you time, save you money and you will end up eating healthier. So follow my Meal planning in Cold Weather today and start saving.

Cold Weather Meal Plan – recipes
Mince is on special a lot in supermarkets and this slow cooker chilli is full of flavour and great on a cold and miserable day. and if you pop it in the slow-cooker in the morning you will come home to a delicious dinner. You can serve this with rice, nacho chips or Baked potato
Tip: You can swap beef mince for meatless mince which is 1.99 a bag. Going Meatless is one way of cutting cost and load it with cheap kidney beans to add extra protein.
This Cajun Pork Casserole is a great cold weather dish and you can use Pork Sir-fry to make it which at €1.89 is a great buy
Tip: Spicy dish are great in cold weather and slow-cooker dishes are fabulous – use slow-cooker liners to make clean up easier.
Pizza is one of those processed foods we all love I know because last week the first freezer emptied was the pizza freezer. But you can make your own this tasty How to make Stuff Crust Pizza. is so actually easy to make and with low-fat Mozzarella makes this a healthier meal.
Tip – Pizza can be loaded with meat and vegetables to make them a tasty meal
The for perfect comfort food make this tasty Bacon and Chorizo gratin for dinner, it is great and if you make it with wholemeal pasta is healthy and filling.
Tip: Chorizo is 1.99 in Lidl and you get a couple of meals from one sausage.
One of my favourite things to pick up when I am on a budget is Lidl’s Beef Stir-fry it is €2.59 and not only can you make stir-fry with it but I use it to make Tasty but Low-Calorie Slow-cooker Beef Stroganoff
Tip: Look for cheap cuts of meat and don’t be afraid to check the reduced section especially in the evening.
TIP: Sometimes fakeaways are great when you need that take-away hit
We always have a roast dinner on Sunday in our house. Thanks to meal planning I had all the ingredients for that today despite being snowed in for 3 days.
We usually have dessert on Sunday and I am going make Nectarine Puff Pastry Tart as I always have puff pastry in the freezer it is great for a quick meal and at 89c you can’t go wrong. And the recipe will be in the Tuesday Newsletter
Tip: Make your own treats at home that way you know what ingredients are in them and you cut down on processed food.
The total for all these dishes is € 39.24 for all your evening meals for 4 for a week and I have included tea, coffee and cordial. I have even designed a Shopping list to help you – click the image to download. If you have a good store cupboard it will be a lot less
