It is a Chilly Menu Planning Monday in Cavan and we woke up to a winter wonderland of ice. So my Menu planning this week will definitely be warming. This is this week Chilly Menu hopefully I won’t make the same slip up this week when I pulled out the mince for Spaghetti and didn’t realise it was beef steak pieces, mind you it did result in this Yummy Beef Casserole so it was a happy accident.
As I still had the mince in the Freezer I decided on a warming Cottage Pie with sweet potato. My Mam calls it Shepard’s pie although that should really have lamb’s meat in it.
Also as I did a roast chicken yesterday for dinner I popped the carcass in a pot last night with herbs and made chicken stock. So I shall use that with the leftover chicken and make a big pot of this warming Chicken and Butternut Squash Soup.
Tip – use your Sunday chicken to make a wonderful chicken stock which you can use for soups
Back to an old favourite Chorzio and Garden Vegetable pasta We love this recipe, it is quick and easy and as Tuesday is a work day and I am usually running around like a headless chicken this recipe is perfect. Admittedly there are no home-grown veggies available in my garden currently but Supervalu does a bag of Mediterranean Style Vegetables in the frozen section which works really well for €2.00 and is great to have in the freezer.
Tip – check the freezer section for cheap and nutritious vegetables especially when they are out of season
Tummy warming stew is a winner when it is cold it will not only be warm and healthy but at 90c a portion for the Veggie version it is healthy on my budget. I will serve it with cheesy mash potatoes or cauliflower mash for me PRINTABLE RECIPE HERE
Tip : load you casseroles and soups with beans and pulse for a cheap boost of protein and fibre
Home-made Pizza is on Thursday. I love that you can just make up your own versions. Try out this stuffed crust pizza dough recipe here which is my favourites – no need to call Dominos 🙂 Or for the Gluten Free version try Easy Homemade Gluten-free Pizza recipe
Tip – don’t want to make Pizza – Lidl have a pack of four large pizzas for €2.79 this week
As it is still January and is we are still budgeting this Cheap and Cheerful Chilli Sausage, Potato, Bean Casserole is a winner for a warming meal that is budget friendly.
Tip: This recipe would work just as well with vegetarian sausages
Sometimes you can’t beat an old favourite like Gluten-Free Mac and Cheese with Bacon Bits. Quick and Easy it is perfect when you have a busy family activity Saturday. Serve with Garlic Bread

Sunday, Along with the usual Roast dinner. I will be making these tasty Gluten-free Raspberry cupcakes with Orange Drizzle.
