Tasty Vegan Irish Stew
Tasty Vegan Irish Stew is as close to a traditional stew my Mammy made as I have ever had.

Tasty Vegan Irish Stew

Irish stew is a stew native to Ireland that is traditionally made with root vegetables and lamb or mutton, but also commonly with beef.

As in all traditional folk dishes, the exact recipe is not consistent from time to time, or place to place. My Mammy would regually make it but I haven't had it since I went first Vegetarian and then Vegan.  Needless to say I would never use meat in my recipe and this Vegan Irish stew has no need for it !!

The "Meat" is actually Soya Protein which is a product made from soybeans. It's often used to enhance the texture and nutritional content of dishes. In addition to being highly nutritious and rich in fiber and protein, it could also support heart health and protect against heart disease and stroke.

This is a slow-cooker recipe although you could do it in the oven if you like - I love the slowcooker as you can put it on earlier in the day and just forget about it!!
