It is Thanksgiving week in the US and I know a large percentage of my lovely readers come from there and I am very thankful for that. So this week’s Thankful Meal Planning focuses on easy recipes to make the run-up to Thanksgiving easier. And even if you are no celebrating we could all do with some easy cheap meals that will make or bank accounts thankful at the end of the week

Monday
We want Easy and Cheap on the run down to a big event. And they don’t come much better than this Effortlessly Easy and Tasty Tortellini just throw it in the slow cooker and get on with running errands. Also, remember to use Slow-cooker liners to save on the clean-up which is one less job to do.
TIP: While you are saving time why not get ahead with your Thanksgiving prep and make your Turkey gravy ahead
Tuesday
We are definitely going for easy this week and a one skillet meal that you can throw together is perfect – this Easy Skillet Garlic Chicken and Potatoes will feed four and takes no time to throw together.
Tip: One pot and one tray meals are the best for making life easier – one thing to wash too
Wednesday
Wednesday is always Pizza night you can even get Gluten-free Pizza for only €2.49 We make ours Gluten Free as my daughter is gluten intolerant but loves LOADS of cheese. Serve it with a Large salad and top with tasty vegetables.
Tip – You can cheat once during the week and you can always make it healthier with low-fat mozzarella topping and lots of healthy veg on top. And if you want to buy from the shop this week to save time do, You deserve a break.
Thursday
Thursday in the US is Thanksgiving and personally, I love the family and being thankful part of it. So why not make this Home-made Cranberry sauce with the added kick of Cointreau for family and friends. Pop it into mason jars and decorate. I will be sharing the recipe in this week’s Snapshot and Snippets newsletter which you can sign up for below.
Also, try my Tasty Root vegetable Gratin which is perfect to go with Turkey.
Friday
What to do with those turkey leftovers if curry is not what you want how about – This Healthy Garlic Stir-fry with Broccoli which is a handy Printable recipe – just click and print.
Saturday
Back to the slow-cooker with a tasty Chilli recipe perfect for the weekend when you are having fun – serve with Nachos, over Rice, with Baked potatoes, the list is endless.

Sunday
For Sunday Dinner I usually cook a roast dinner with Free- range chicken and lots of veggies from the garden. Which you might not want to do as you have had that big roast in the middle of the week. How about Bacon, Chorizo and Spinach Easy Cheesy Pasta which is easy and Cheap and filling and a perfect potluck meal.

What a lovely weekly plan! I am actually cooking up some cranberry sauce tomorrow, mostly for garnish to a baked Camembert appetizer – I love the idea of preparing a gift jar of it to give to our guests and will use the extra sauce in that manner.
