Can you believe that today is the Start of the Spring equinox and tomorrow is officially Spring? Or Like me are you looking at snow on the ground wondering if Spring will ever arrive? How about some Spring Meal Planning to put some spring in your step and money in your purse to cheer you up on these dreary days.
The great thing about meal planning is that if you take 10 -15 minutes to plan for the week ahead you will ultimately save you time, save you money and you will end up eating healthier. So follow my Spring Meal Planning Menu today.

Spring Meal Planning Menu – recipes
Today is a Bank Holiday in Ireland and we are having Roast chicken ( we were meant to have it yesterday but everyone was out) so it is happening today.
Tip: Just because you planned meals doesn’t mean you can move meals around in that week to suit your diary. Meal Planning doesn’t have to be rigid.
I am sharing this tasty leftover chicken curry in my Newsletter this week – the great thing about this recipe is you could use it with turkey, pork, lamb and beef or even vegetables perfect for a cheap meal.
Tip: Don’t be afraid to use leftovers in your meals as long as they are stored properly the night before they are fine and save you money.
This Easy Tomato, Basil, Mozzarella Puff-pastry Slice is a great alternative to Pizza and so adaptable to your tastes too – if you want lots of toppings you can add them
Tip -Frozen puff pastry is cheap in Lidl and Aldi and very handy for quick and tasty recipes
On cold snowy days getting out the slow-cooker is great and this Amazing Slow Cooker Catalan Beef Casserole will make you dream of warm days.
Tip: If you can’t get Steak pieces cheaply Lidl has plain beef stir-fry which is 1.99 this week and is great as a substitute.
Tip: Always check out the special offers in your supermarket to keep costs down
Saturday is the perfect time for a Fake-away like this Prawn Hoisin Stir Fry with Coconut Rice – easy to make and saves you from reaching for that takeaway menu
TIP: There are lots of fake-away recipes to help you out there
On Sunday I will be cooking our usual Roast Dinner with vegetables, even if we had it on Monday this week.
For dessert, I will make this Apple and Almond Cake – Gluten free
Tip: Check which fruits are on Special offer and base desserts around them
