Easy Lemon Chicken with Asparagus and Potatoes

I promised on Easy Budget Meal Planning Monday to share this Easy Lemon Chicken with Asparagus and Potatoes recipe. It is a one tray recipe and if you shop the specials can be a cheap but impressive looking meal. I love a great traybake and one tray means less washing up. This recipe was made on a budget which I break down for you below.

The cost of Easy Lemon Chicken with Asparagus and Potatoes

  • Chicken – € 9.99 for Ten so 3.99 for 4
  • Asparagus – 49c ( special )
  • New Potatoes 99c
  • Lemon 49c

Just under €6.00 so €1.50 a portion.

Ingredients
  • 4 skinless chicken breasts
  • 1 bunch Asparagus
  • 1 Lemon
  • 600 g - New Potatoes
  • 2 tbsp olive oil
  • 2 cloves garlic chopped
  • 1 tsp parsley chopped
Servings: people
Instructions
  1. Place the chicken into a freezer bag with the garlic, parsley, and some olive oil and lemon rind (not juice it makes the chicken tough) Leave for at least an hour to marinade
  2. Place the chicken, chopped new potatoes, asparagus spears on a baking tray
  3. Sqeeze a little lemon juice over and a splash of Olive Oil
  4. Cover with foil and cook at 180°C /350 °F for 30 mins

If you have a large family you could make two trays. Chicken breasts are expensive so if you wanted to make this with Chicken legs or thighs but I suggest you cook the asparagus, separately and for less time.

    This one is right up my alley Amber, I love recipes that go in the oven and I don’t have to use a ton of pots and this combination is so delicious!
